Seer fish - 100 gm

Calamari - 100 gm

Titi shrimps - 100 gm

Lime juice - 150 ml

Salt - 25 gm

Pepper - 20 gm

Cabbage cup - 1 no

Pineapple cubes - 50 gm

Watermelon cubes - 50 gm

Papaya cubes - 50 gm

For tequila dressing

Olive oil - 100 ml

Lime juice - 50 ml

Wine vinegar - 50 ml

Salt - to taste

Pepper - 1 pinch

Dill leaves - 1 gm

Tequila spirit - 5 ml


Thinly slice frozen fish, Cut calamari squid into small rings. Peel and devein the shrimps. Marinate the above ingredients with salt, pepper, lemon juice and dash of olive oil. Keep the above marinated sea food inside the chiller.

To assemble and present: arrange seafood ceviche in the cabbage cup on top with brunoise of pineapple, papaya and watermelon. Drizzle tequila dressing on the top.
