Cream cheese or fresh yoghurt: 250gm
Grated rind of one lemon
Caster sugar: 1 table spoon
Whipped cream: 125 ml
Ripe mango: 1big sized
Lemon juice: 1
Caster sugar: 4 tsp
Mix sugar, lemon rind and cream cheese together. Whisk cream and fold into the above. Line mould with cling film and pour the mousse batter into it and chill.
Slice mango into 12 thin slices and set aside. Chop the remaining mango and put into food processor with lime juice and sugar.
Blend until it forms a smooth paste. Strain the juice.
Turn out the mousse on a plate, arrange three mango slices in each plate and pour some sauce around.
Garnish the mousse with rind of lemon.
