Kaiserschmarrn from the German ‘kaiser’ meaning emperor and ‘schmarrn’ meaning nonsense is an Austrian dessert. Legend has it the wife of Austrian Emperor Francis Joseph I, Elisabeth of Bavaria was obsessed with having a small waist and refused to indulge in heavy desserts. The exasperated emperor opened the dish and is quoted to have said, “Now let me see what ‘schmarrn’ our chef has cooked up”. It apparently met his approval and his wife’s and the dessert was called Kaiserschmarrn across the Empire.
The light caramelised pancake is split into pieces while frying, shredded after preparation and usually sprinkled with powdered sugar, then served hot with apple or plum sauce or various fruit compotes, including plum, lingonberry, strawberry, or apple.
