A Chinese dish with snow peas

Peas belong to the vegetable family ‘Legumes’, whose plants produce pods with enclosed seeds. Snow peas are edible peas in pods with the best features of snap beans (tender and crispy) and garden peas (sweet and meaty). Young snow peas are excellent for salads. Snow peas are a valuable source of protein, iron and insoluble fibre. Insoluble fibre helps reduce serum cholesterol thus reducing the risk of heart disease and stroke. Snow peas are used widely in Oriental cooking, mostly by the Chinese in their stir fries.

Stir fried greens

Ingredients

Snow peas: 100 gm

Chinese cabbage: 50 gm

Pakchoy: 50 gm

Garlic, chopped: 15 gm

Salt to taste

Pepper to taste

Sugar to taste

Butter: 10 gm

Mushroom sauce: 15 gm

Method: String the snow peas and blanch them. Cut the Chinese cabbage and pakchoy into medium-sized pieces. Heat oil in a pan and sauté half the quantity of chopped garlic. Before the garlic gets brown, add Chinese cabbage and pakchoy. Sauté them well and spread the leaves on a plate. Now add the remaining half of the chopped garlic in oil and sauté well till it turns brown. Add snow peas to this and add some mushroom sauce and pepper to taste. Sauté them well with the sauce and check for seasoning. Finish with butter and put the peas on top of a bed of greens already spread on a plate and serve.
