Chef comments: French cheese pakoda by P. Bharat is a great fusion of cheese and potatoes with an Indian batter. It turns out delicious with the melted cheese inside after frying. My compliments for the recipe.

Ingredients:

Potatoes: 3

Large cheese slices: 4

Extra virgin olive oil: 4tbsp

Salt as per taste

Pepper powder: 1tbsp

Lemon: 1

Chilli Powder: 3 tbsp

Besan: 250gm

Rice flour: 20gm

Onions: 2 medium

Turmeric powder: 1tbsp

oil for frying

Baking powder: 1/4 tbsp

Method:

Peel the potatoes and cut them into long, narrow and thick strips like French fries. Steam these strips on a steaming basket (make sure that they are only half-boiled).

Take a frying pan and gently roast these strips using olive oil. Sprinkle salt, pepper powder and lemon juice. Now cut the cheese slices into long narrow strips as long as the potato strip. Mix besan with rice flour, add chilli powder, coarsely chopped onions, salt, turmeric and baking powder and make a batter out of them by mixing it with sufficient water Take the fried potato strip attach a cheese strip to it, coat with the batter and deep fry it in oil. Repeat the procedure for the other strips too.

Garnish with cheese, onion and lemon juice. Serve hot with tomato ketchup
