D iets can be depressing. Especially if you start every single day with egg whites and dry whole wheat toast. So how about some pumpkin and cinnamon pancakes for a change? With some help from Katie Farrell, it's possible.

I firmly believe that ‘dieting' is horrible (in so many ways) and that it doesn't last.

“And even if it does for a period of time, it makes people miserable and ultimately ends in failure! Besides, who wouldn't want to ditch the diets forever and start eating the foods they love, while keeping you healthy, satisfied, and in shape?

“Pumpkin and Cinnamon…They're the ultimate flavours of fall. Combine them in a pancake that tastes as rich as a slice of cake, and you have the perfect breakfast to kick off the fall season! Serve them warm with low sugar syrup…

Put 1 scoop protein powder, 1/2 cup pumpkin, 1/2 tsp cinnamon, 1/2 tsp baking powder, 2 egg whites, 1/2 cup oats, 1/2 cup + 2tbs water and 3-5 packets stevia (or 1/2-1 tbsp sweetener of choice) in a blender and blend until smooth!

Meanwhile, heat a non-stick griddle (or large non-stick skillet) coated with cooking spray over medium heat. Spoon about 1/4 cup of batter per pancake onto griddle. Turn pancakes over when tops are covered with bubbles and edges look cooked. Serve warm!”
