A classic of American Chinese — and British Chinese — cuisine, this dish is simplicity itself. The dish is basically an omelette made with ham / bacon, mushrooms and green or red peppers and a dash of soy sauce, and served with brown gravy or a red pepper and sweet chilli sauce. There are a great many variations on the theme. Egg foo yong has been around for a great many years, and it is believed that American Chinese chefs have been serving it up since the 1930s.
