Recipe Corn can be used in multiple ways in various cuisines. Here are a few easy to prepare dishes

Corn can be used in all kinds of cuisines. You can roast it, boil it or fry it. It can also be baked or grilled. Try these mouth watering dishes which can be made in a jiffy with readily available ingredients.

SPICY SWEET CORN

Ingredients

Fresh sweet corn: 500 gms

Butter: 2-3 tbsp

Finely chopped onion: 1

Green chillies: 5-6

Fresh cream: 200 gm

Fresh curds: 200 gm

Freshly chopped coriander leaves: 3 tablespoons

Salt to taste

Method

Heat the butter in a flat pan. Add the onions and green chillies and stir fry for a few minutes. Then add the sweet corn. Add salt to taste. Cook on a low flame. Allow the mixture to cool. Then add the cream, curds and coriander leaves. Mix well. Serve hot.

GRILLED CORN TOAST

Ingredients

Bread slices: 12-14

Fresh corn: 200 gm

Onion: 1

Green capsicum: 1

Yellow capsicum: 1

Thick white sauce: 1 teacup

Butter: 2 tbsp

Grated cheese: 3-4 tbsp

Salt and Pepper to taste

Red chilli flakes (optional): 1/2 tsp

Method

Cut the bread into desired shape using a bread cutter. Apply butter and partially toast it. Keep it aside.

Heat the butter. Stir fry the onions until light brown. Add both the capsicums and stir fry again. Then add the corn. Stir fry again. Then add the white sauce, pepper, salt and chilli flakes. Cook on a low flame. Add a bit of grated cooking cheese. Mix well.

On the bread slices spread the corn mixture. Top it with grated cheese and bake until crisp and the cheese turns brown. Serve hot with a spicy sauce.

CHEESY CORN CUTLETS

Ingredients

Fresh corn (coarsely grounded): 2 cups

Boiled grated potatoes: 1 cup

Grated paneer: 1 cup

Grated cheese: 1/2 cup

Green chillies, finely chopped: 3-4

Ginger finely chopped: a small piece

Chopped coriander: 4 tbsp

Corn flour: 3-4 tbsp

Salt and Pepper to taste

Bread crumbs: 1 cup

Oil for frying

Method

Mix the corn, potatoes and paneer. Add the grated cheese, green chillies, ginger, chopped coriander, corn flour, salt and pepper. Knead well. Make small balls and give it a shape of cutlet. Roll the cutlet on bread crumbs and deep fry in hot oil. Serve hot.

BAKED CORN AND BELL PEPPER

Ingredients

American corn: 250 gms

Onion: 1

Green capsicum: 1

Yellow capsicum: 1

Red capsicum: 1

Fresh cream: 200 gm

Salt and Pepper to taste

Butter: 3 tbsp

Cheese: 3-4 tablespoons

Method

Heat butter in a pan. Add the onions and all the capsicums. Stir fry on a low flame. Add the corn and the remaining ingredients. Then add the cream. Cook on a low flame. Grease an oven dish. Pour the ingredients and top it with grated cheese. Bake in a hot oven and serve hot.
