Blini

Blini are small, yeast-leavened, buckwheat pancakes that originally came from Russia. Classically they are served with sour cream and caviar or smoked salmon, jam and honey. Blinis had a ritual significance for Slavic peoples in pre-Christian times since they were a symbol of the sun, due to their round form. They were traditionally prepared at the end of the winter to honour the rebirth of the new sun. This tradition was adopted by the Orthodox Church and is carried on to this day. The caviar filling is popular during Russian-style cocktail parties.
