Like almonds? Like to try your hand at cooking? Have time in hand? If the answer to all of these is yes, then try out this yummy sweet recipe made of almonds this weekend.

Badam pak

Ingredients

500 gm almonds

300 gm ghee

400 gm sugar

200 ml water

A pinch of cardamom powder

Method

Blanch the almonds (in boiling water drop the almonds. Remove from fire and leave for 30 minutes. When the skin bloats, rub between hands and remove the skin).

To the blanched almonds add a little water and make a smooth paste

Take ghee in a kadhai, add the almond paste and stir fry till it becomes light brown in colour. Remove and keep aside.

In a separate pan/kadhai, heat the sugar and water and allow it to simmer.

As scum keeps forming on top, keep removing it till a clear syrup is left in the kadhai. Keep boiling on low flame till the syrup reaches the soft ball stage (When you pour a drop of the sugar syrup in cool tepid water, the sugar syrup should form a round ball and should be soft when pressed between fingers.)

To the sugar syrup add the almond paste and cardamom powder and mix well.

Grease a tray and pour the mixture and let it cool. Cut when set into desired shapes and serve
