The simple Mediterranean dish brings together chicken grilled with vegetables.

Zucchini and bell peppers make it a colourful skewer.

Grilled Chicken and vegetable brochettes with Tzatziki


Fresh lemon juice 2 tbsp

Dried oregano 1/2 tsp

Olive oil 2 tsp

Salt 1/2 tsp

Garlic paste 1 tsp

Chicken breast, cut into one-inch pieces, skinless, boneless 200 gms

Medium zucchini, cubes 4

Red pepper, diced 2

Green pepper, diced 2

For Tzatziki Sauce

Cucumber, peeled, seeded, and

Shredded 1/2 cup

Plain low-fat yogurt 1/2 cup

Lemon juice 1 tbsp

Salt 1 tsp


Marinate the chicken with lemon juice, oregano, olive oil, salt and garlic paste and refrigerate for 30 minutes.

Thread the chicken cubes alternately with zucchini and peppers onto four (8-inch) skewers.

Heat a grill to medium-high heat, grill the chicken on all sides for eight minutes or until the chicken is done.

To prepare the tzatziki sauce, combine cucumber, yogurt, lemon juice, 1/4 teaspoon salt and 1 garlic clove and stir well. Serve the tzatziki sauce with the grilled chicken.
