When you say that a place is ‘unchartered’, what you mean is that the area has not been explored. As it has not been surveyed, you will not find it plotted on any map. It is something that is new and has never been described.

*We don’t know anything about the island. It is uncharted.

When you refer to a situation or an experience as being ‘unchartered waters’ or ‘unchartered territory’, you mean it is new or unfamiliar. The two expressions are used to mean ‘unknown’.

Being in the final of a Grand Slam tournament is unchartered waters for Andy.
