The Italian warmth

Move over pasta and pizza, Italian cuisine is here in all its glory! Making waves and converting people into diehard admirers by hordes, Italian cuisine is finally getting its due. Italian seafood is widely appreciated, especially the famous lobster delicacies coming out of Sardinia, a tiny island in the Mediterranean Sea. With its huge coastline and access to a variety of fresh seafood, the cuisine along the Italian coast is diverse with every region having special ingredients and techniques.

As a preparation for the winters and in anticipation of heightened interest in Italian cuisine, the Radisson Hotel has organised a lobster and asparagus food festival at the Italian restaurant. With the winters considered the best for having seafood, as it is not only abundantly available after the rainy season but also warms you up in the chill, the time is ripe for the city to raise a toast to lobsters.

Italian feeling

Sitting at Italia almost transports you to an Italian patio, with the green shingles on the roof, stucco, strategically placed fountains dotting the place and a live Italian band complemented by the sound of flowing water. With Italian cuisine being family oriented, it is a great hit with families as they can get together and relax over food, says Sanjay Wadhwa, Assistant F&B Manager at Radisson. With the Lobster Thermidor being the highlight of the festival along with the Zuppa Di Asparagi (asparagus soup with spinach and mushrooms) the chefs ensured authenticity by importing the main ingredients of olive oil, cheese and dried assorted herbs from Italy.

"Technique is a key factor to any lobster delicacy, as the delicate shell if broken while cooking or baking wastes the exclusive lobsters," says Chef Sreenivasan. With prawns and fish being the most popular seafood in Delhi, the festival, concluding this Sunday, has been organised to introduce lobsters as an important seafood in the Capital's palate and judging by the response received at the festival the trick really works!
