AWAY FROM the busy Hosur Road, a little unpretentious joint called Munchies greets you. Given its modest bearings, you could almost miss the place. It offers all kinds of bakery products ranging from burgers to pizzas and pastries to croissants to name a few. Though it is barely three-months-old, its name has travelled far and wide, and by word of mouth. And the woman behind the success of this joint is Susie Augustine, who decided to convert a hobby and a latent talent into a promising business venture. Says Ms. Augustine: "Cooking was always a passion with me, especially baking. From a young age I've tried my hand at various kinds of dishes."

But what made her start this venture? "Since I have always loved cooking, I thought I would do it on a commercial basis, but on a small scale to retain my personal touch."

Did she undergo any formal training? "Not exactly. I did a three-day baking course in the University of Agricultural Sciences when I was 15. But my training has come more from pouring over recipe books and finally arriving at the right one by trial and error method."

With her father offering to give her place for the venture and her husband assuring support, she went ahead. "They took care of the finance, while I concentrated on the product and market."

Munchies specialises in catering to kids' parties, besides supplying all kinds of snacks to some IT companies in the City. Between 4 p.m. and 7 p.m. attracts there is a big crowd with those working close by making a beeline to the shop for their evening snacks. With more offices in the know of this joint, Munchies is being flooded with orders.

With new offers pouring in, Ms. Augustine is faced with a new problem — insufficient space and lack of infrastructure to handle such orders. "When I started, I planned to do it on a small scale. But with more offers coming in I need to look for a larger space to carry out my operations."

Is she looking forward to expanding her business on a large scale? "Not really. One thing I take pride in is the personal touch that goes into my products. I believe in personally making the filling that goes into the burgers and patties. This way I can assure that my products would taste the same every time. If I start catering on a mass scale, I will not be able to lend this personal touch. Though I plan to expand my business, I would still like to keep it within manageable limits."

How do her products compare with other similar outlets and established larger outlets? "Since it is done in a small scale and I personally do the fillings, I have better control on what goes in. Besides, unlike many other outlets where a burger or a patty would have hardly any filling, we ensure that there is plenty inside where that plenty doesn't translate into just masala but actually chicken, mutton or vegetable as the case may be. In fact, that is the reason our product have become so popular."

The success is not confined to just burgers and hot dogs. It extends to cakes too. Ms. Augustine specialises in custom-made cakes to suit the fancies of the little chief guest in question on the occasion of the most important day of the year.

She adds: "The main mantra behind this venture is to satisfy the customer by ensuring that every piece is perfect and there is value for money". If the sampled vegetable patty was representative of things in store, she certainly has fulfilled that objective.
