Go creative with cakes

Cakes can be enjoyed at any time. Try some of these delicious varieties.

CALES FOR ALL OCCASIONS: Indulge in these baked delicacies.

CAKES ARE a universal favourite. They are a tea-time delicacy (given our colonial hangover) and ideal as desserts in the forms of gateaux. Invariably the chocolate and plum cakes are the popular ones. But the repertoire extends beyond these varieties and we present a few different ones. Spend a great time baking and serving them.

Carrot cake

Ingredients:

Brown sugar - 250 gms
Oil - 60 ml
Salt - 1 tsp
Cinnamon powder - 1 tbsp
Eggs (beaten) - 4
Baking soda - 2 tsp
Carrots (grated) - 400 gms
Whole wheat flour - 220 gms
Nutmeg powder - 1 tsp

Method: Combine sugar, eggs, oil and carrots. Add sifted dry ingredients, mix well. Grease a flour pan and bake at 350 degrees Fahrenheit for one hour. Cool on rack for 20 minutes before removing from pan.

Date and walnut cake

Ingredients:

Dates - 450 gms
Walnuts - 200 gms
White sugar - 200 gms
Butter - 200 gms
Eggs - 2
Flour - 250 gms
Baking soda - 1 tsp
Vanilla - 1 tsp
Water - 60 ml

Method: Cream butter and sugar. Add eggs. Pour in cold water, then add flour, baking soda, vanilla, chopped dates and walnuts. Bake at 350 degrees Fahrenheit for one hour.


Coconaka cake

Ingredients:

Shredded coconut - 190 gms
Milk - 120 ml
Sugar - 300 gms
Butter - 85 gms
Vanilla - 1 tsp
Flour - 325 gms
Salt - 1 tsp
Baking powder -2 tsp
Glazed cherries - 100 gms

Method: Soak coconut in milk for 10 minutes. Cream sugar and shortening (butter) together. Add vanilla and eggs. Sift dry ingredients together and add alternately with coconut mixture. Bake in a pan at 325 degrees Fahrenheit for 50 minutes.

Hot milk sponge cake
Eggs - 2
Sugar - 125 gms
Vanilla - 1 tsp
Flour - 200 gms
Salt - 2 tsp
Baking powder - 1 tsp
Boiling milk - 75 ml

Method: Beat eggs well. Add sugar and vanilla and continue beating for about five minutes until very light. Blend flour, salt, baking powder, then add all at once to eggs and just mix. Melt butter in boiling milk, pour over all at once and beat just enough to mix. Pour into a well-greased cake pan and bake at 350 degrees Fahrenheit for 30 minutes or until golden brown.
