National school on baking technology opened

New programme announced to cater to professionals in baking industry

In tune with the successful running of International School of Milling Technology (ISMT), established in 1981, CFTRI has now conceptualised another centre – National School of Baking Technology – to set a benchmark in terms of quality and standards of bakery products in the country.

A five-week programme has been announced for the initial stages and in due course will be upgraded to a full-fledged six-month programme.

The programme will commence from the first week of November. Participants will be trained on choice of quality ingredients, product development, quality aspects including the establishment of sustainable and hygienic bakery units.

Those who have completed matriculation can seek admission to the course. The medium of instruction will be English. The programme will be a boon to the large number of personnel employed in the unorganised sector and budding entrepreneurs, a release stated here.

Infrastructural facilities

The institute has advanced infrastructural facilities for baking processes which include roller flour mill plant with a capacity of 20 tonnes/day, chakki atta plant with a capacity of 10 tonnes/day, analytical laboratory for physico-chemical characterisations, rheology laboratory, pilot-scale baking and extrusion, and more, the release added.

The faculty involved in research and development and product development at the institute will be associated with the training.

First come, first served

Admission will be done on a first come, first served basis. The intake is restricted to 25. Accommodation will have to be arranged by individual participants. A certificate will be awarded to successful candidates at the end of the programme.
