‘Khansama Food Festival' launched

Be it Kakori Kebab or Hara Mutter Galouti, the kitchen of Fortune Murali Park Hotel wants the gourmets of the city to have a taste of what the Maharajas and Nawabs ate at the height of their glory.

The Welcomgroup Hotel launched the “Khansama Food Festival” at Zodiac, its 24-hour restaurant on Thursday. General Manager P.K. Venkatesh said that the food festival was dedicated to the ‘khansamas', the royal cooks of the Nawabs, and would recreate for customers the culinary grandeur of the glorious past.

The Zodiac Restaurant has been decorated with satin drapes and cut-outs of palaces to create the ambience of the era. The stewards have also been attired in Nawabi outfits to add glamour to the event.

Executive Sous Chef P. Sreedhar Reddy said that all classic nawabi dishes like kababs, shorbas and biryanis would be available in the buffet during the festival. A variety of spices, nuts, milk products, dry fruits and even some very exotic mushrooms were being used to cook the dishes in the way they were served to the kings, Mr. Reddy said.

Zameen Gosh Kabab, Bunnu Kabab and Galouti (melt in the mouth) kababs are some new dishes that can be relished by the connoisseurs at the festival, he said. Beginning with the Murgh Birbali Shorba (Chicken broth), Kesar Subz Shorba (Saffron vegetable broth) curries and biryanis like Lagan Ka Murgh(creamy chicken curry), Lucknowi Chicken Biryani, Arcot Mutton Biryani, Kathal (Jackfruit) Ki Biryani, Kofta Asaf-u-Daula, Dahi ‘Wah' Bhindi, Mushroom Labadhar, Diwani Handi and Dal Dum Pukht were on the buffet royale on the opening day of the food festival that runs till May 12.
