The sweet fragrance of basil, the sharpness of olives, pan seared fillets of fish marinated in lemon juice and placed artfully on a mound of mushy mashed potatoes infused with tomatoes is this wholesome serving. Completing this ensemble is a lavish drizzle of garlic infused olive oil and a tomato coriander vinaigrette. A healthy garden salad on the side is more than an embellishment.
