Burmese chicken
INGREDIENTS
Chicken Pieces 1.5 kg
Ghee/Oil 2 tablespoon.
Onion 2 nos.
Bay leaves 3 nos.
Turmeric 2 spoons.
Chilly powder quarter spoon.
Cardamom half spoon.
Cumin half spoon.
Coriander half spoon.
Ginger half spoon.
Cinnamon stick 1 no.
Lemon Grass 2 stems.
Garlic 6 cloves.
Fresh ginger 1 spoon.
Chicken stock 1 cup (250ml).
METHOD
First cook the chicken pieces separately. Heat oil and add cinnamon, cardamom, cloves and bay leaf. Add and sauté ginger, garlic paste and green chillies. Now add the cooked chicken pieces with turmeric, cumin and coriander powder. Cook till the chicken is tender. Finally add coconut paste and salt and cook for few minutes. Garnish with coriander leaves and serve hot.
