Quick and easy-to-make, truffles make the perfect gift for Valentine's day or what about chocolate popcorn. Makes 3 dozen

Ingredients

Semi-sweet chocolate – 180 gm

Yolks of eggs – 2

Butter (unsalted) – Two-thirds cup, softened to room temperature

Powdered sugar (sifted) – One-and-one-third cup sifted

Vanilla extract – 2 tsp

Cashewnuts (chopped) – Half cup

Cocoa powder (unsweetened)

Crème de menthe or Grand Marnier – 2 tsp (optional)

Method

Melt the chocolate in a double boiler, stirring often, over a low flame. Remove from heat and let cool. Cream the butter and the yolk.

Gradually stir in the sugar to blend. Add the cooled chocolate into the sugar mixture. Sprinkle nuts and add vanilla extract. Refrigerate until firm enough to shape.

Form into one inch balls. Roll the balls in the cocoa. Chill until serving. Can also be frozen.

Note: You can substitute the vanilla extract with the above-mentioned liqueur .
