You won’t have to skip breakfast or go through tedious meal preparations with these easy and cool meals in a mug

We have all had days when we are late for morning meetings and skip the morning meal. We have been told time and again about the importance of breakfast but it is the easiest meal to skip in our morning rush. Enter meals-in-a-mug. These quick morning options are quirky and easy to whip up in a few minutes to keep the tummy filled and you ready to face your day.

Egg-a-licious

Eggs for breakfast are nothing new. There are various ways of making and baking them. But to make this trendy meal, take two eggs, whisk them in a microwavable mug and add two tablespoons of milk and 1 teaspoon of parsley (dried or fresh) and one green onion. Add salt and pepper to taste and mix well. Microwave for a minute, mix again and break up any large chunks of egg. Cook again for 45 seconds or till the egg sets. Voila! Your protein in a mug is ready.

A sweet start

Move aside waffles. It’s time for muffins to take the spotlight. Those who like to begin their day on a sweet note can start with some soft, gooey muffin in a mug. ‘Blueberry muffin’ sounds complicated but is rather simple. Take one tablespoon each of coconut, almond and oat flour in a mug. Add two tablespoons of white or brown sugar along with half teaspoon of baking powder and a pinch of cinnamon. Mix the powder and add one egg and one tablespoon of milk as well as mashed banana, pumpkin or starch. You can experiment with other fruits too. Mix well. Add three tablespoons of frozen blueberries and microwave for two minutes. If you do not have frozen blueberries then you can use blueberry jam on top.

Vouch potato

We love everything to do with the potato and it is an indispensable ingredient in the kitchen. It is comfort food on days you do not want to burn a hole in your pocket. So why not have potato in a jiffy? In a large mug take one chopped potato submerged in cold water. Cook in the microwave until tender. Drain the water and add one tablespoon of chopped onion and two tablespoon of peppers or any other vegetable of your choice. Mix well. Then add two tablespoons of grated cheese and two teaspoons of fresh or dried rosemary along with half tablespoon of butter. Microwave till the cheese melts and enjoy your mug meal!
