My grandma’s recipe: Masala Suyam/ Paniyaram

The ultimate Chettinad tea-time snack

I learnt this recipe from my mother-in-law in Devakottai. It is generally served for breakfast on special occasions.

What you need: (Serves 12)

Raw rice: 400 gms

Urad dal: 150 gms

Green chillies: Eight

Big onions: Four

Mustard seeds: Two Tsp

Coriander and curry leaves: A pinch each

Coconut: Few pieces

Oil: For frying

Salt: To taste

Cooking instructions:

Soak rice and urad dal for an hour, grind it and set aside. Heat oil in a pan, splutter mustard seeds and sauté chopped green chillies, onions, coriander and curry leaves. Now mix contents with the rice-urad dal batter and add salt and small coconut pieces. With a ladle, pour batter into hot oil and deep fry.
