Green soup
Ingredients
Spinach, finely chopped: 3 medium sprigs
Onion, minced: 1, medium-sized
Tomatoes, diced: 2 medium-sized
Water: 3 cups
Cornflour: 1 tsp
Butter: 1 tbsp
Cream: half cup
Salt and pepper to taste
Method:
Saute onion in one teaspoon of butter. Add finely chopped spinach, tomatoes, water, salt and pepper.
Cook until spinach is tender. Mash and pass through a sieve.
Mix cornflour with remaining butter (melted) and add to the strained spinach.
Reheat and cook for 3 minutes longer. Serve hot, topped with cream.
Green goodness pizza
Ingredients
Pizza bases, readymade: 2
Oil for brushing
For the filling
Cheese spread: 2-3 tsp
Tomato sauce: 1 tbsp
Greens (spinach, cow pea leaves, coriander leaves), chopped: two-and-a-half cups
Green chillies, chopped: half tsp
Green spring onion: 2 tbsp
Oil or butter: 1 tbsp
Salt and pepper to taste
For the topping
Thick broccoli stems cut into small pieces: 4-5
Grated cheese
Method:
Cook greens in very little water until they become soft. Drain. Heat oil in a pan and fry spring onion and green chillies for a minute. Add the greens, salt and pepper and cook for 1-2 minutes. Mix well and keep aside. Cook broccoli and water in a skillet over medium heat covered for about three minutes, till broccoli is tender. Allow it to cool. Keep aside. Brush a tray with oil and arrange pizza crust on it. Now apply cheese spread on each base evenly. Spoon tomato sauce over it and spread it nicely. Spread some green mixture on each crust, top with broccoli pieces and sprinkle with cheese. Bake in a preheated oven at 200 degree C for 10 minutes or until cheese melts. Serve hot.
Green creamy delight
Ingredients
Bananas, cut into pieces: 2-3
A slice of musk melon
A handful of greens of your choice (spinach, amaranth leaves, fenugreek, lettuce leaves, pigweed, mustard greens)
Some coconut water to blend
Method:
Blend all ingredients together. Pour the smoothie into individual glasses and serve with ice cubes.
