Pumpkin pachadi is a traditional Kerala-based dish which is easy to make and healthy. I learnt this recipe from my mother.

What you need

Pumpkin – 300 gm

Coconut, grated – 1 cup

Red chillies – 4

Mustard seeds – 2 tsp

Tamarind – small ball

Salt – 1 tsp

Asafoetida – a pinch

Cooking Instructions

Boil yellow pumpkin in tamarind water and add salt and turmeric powder.

Allow it to boil for 10 minutes till the tamarind's raw smell fades.

Grind coconut, red chillies and mustard seeds into a fine paste.

Add the paste to the boiled pumpkin and cook the mixture for five minutes.

Season mustard seeds, red chillies and asafoetida and add to the mixture.

Garnish with curry leaves.
