Capsicum cups

Ingredients

Large capsicums – 4, cut into halves lengthwise and scooped out

Potatoes – 1 cup, boiled and

mashed

Paneer – 200 gms

Onion – 1, finely chopped

Pepper powder – 1 tspn

Green chillies – 1, chopped

Small Tomato – 1 small, chopped

Coriander leaves – a handful,

chopped

Subzi masala – half tspn

Dry mango powder – half tspn

Butter – 2 tspn

Grated cheese – 4 tspn

Salt to taste

Oil for cooking

Method

Boil six cups of water with salt; when it boils, add capsicum. Remove after a minute and keep them upside down. To prepare the filling, heat oil in a pan. Add onion and cook till transparent. Add tomatoes, green chillies, salt, subzi masala and cook for a few minutes. Add mashed paneer and potatoes. Mix well. Add pepper, dry mango powder, coriander leaves and cook for two to three minutes.

Remove from fire. Mix butter with the hot fillings. Put the filling mixture in the scooped out capsicum halves. Press. Top it with grated cheese. Place on a greased tray and bake for 10 minutes.

Serve hot.
