Ingredients

Maida-one cup

Butter- half cup

Sugar- half cup

Fresh cream- one cup, whipped with 2 tsp sugar

Desiccated coconut- half cup

A pinch of salt

Eggs -2, beaten well

Baking powder- 1 tsp

Lemon juice- 6 tsp

Bananas- 3, cut into long slices

Method

Beat the butter and sugar together till fluffy. Add the eggs and continue beating for a few minutes. Add in the flour, salt and baking powder and mix well. Pour the mixture in a greased baking dish. Arrange the banana slices evenly on top. Sprinkle lemon juice and desiccated coconut over the slices. Bake for 25 minutes until brown on the top. Remove from the oven and when cold turn over on a serving dish and keep in the fridge. Decorate with whipped cream before serving.

Bread pudding

Ingredients

Bread – 8 slices

Milk- 2 cups

Butter – 50 gms

Sugar- 3 tbsp

Vanilla essence – half tsp

Cashew nuts- half cup chopped

Eggs- 2, beaten well

Method

Remove the crusts from the bread slices and break into small pieces. Take a baking dish and grease it. Spread the pieces of bread in it. Mix the milk, beaten eggs, sugar, and vanilla essence and butter together. Pour the mixture over the pieces of bread soaking them completely. Sprinkle the nuts on the top. Bake in a hot oven for 20-30 minutes.

Note: this pudding can also be steamed for 30 minutes instead of baking if desired.

Cashew nuts ice-cream

Ingredients

Milk-4 bottles

Cocoa powder- 2 tbsp

Powdered sugar- one cup

Ghee – one tsp

Cashew nuts- one cup

Method

Boil milk. Simmer, stirring continuously till it becomes thick and creamy (about one bottle). Mix cocoa in little water or milk and add to the cream. Blend well. Remove and set aside to cool. Pour into an ice-cream tray or bowl. Once it sets a little, fry chopped nuts in one tsp ghee. Sprinkle nuts evenly on the cream. Freeze till it sets. If you put the nuts before the ice-cream sets a little, the nuts will sink to the bottom.

Ginger flavoured lime juice

Ingredients

Fresh ginger, finely ground -1/8 inch piece

Lime juice- 3 tbsp

Water- half litre

Crushed ice

Sugar-3-4 tbsp

Method

Strain ginger and lime juice. Add water, sugar and salt. Chill. Just before serving add crushed ice.
