Mushrooms galore at Funghi fest at Tuscany

Nothing can lift your spirit and your mood better than a warm cuppa. Now imagine one with a frothy mushroom soup. Every spoonful is a delight and you’ll not realise when one reaches the bottom.

Funghi fest at Tuscany at Trident Hyderabad is all about mushrooms — the variety and the unique taste each one comes with. What prompted executive Chef Manik to go for the fest is the fact that the mushrooms they are serving are all rare to find in the local stores. In Manik’s words, “It is difficult to procure, but I need to have them in our kitchen. So I opt through specified suppliers.”

The varieties on offer at Tuscany are Porcini, Morels, Oysters, White Fungus and a few others. “With an abundance of variation around the world, the versatility of mushrooms can work their magic in almost any dish — starting from appetisers and salads to main dishes and sides,” adds Manik as he discusses the types of mushrooms that are in India in various regions.

The second presentation was an assortment of crumb-fried mushrooms, chocolate mushrooms with sea salt. These bite-sized delights can be popped right into the mouth not minding who is keeping an eye on your table etiquettes.

The menu for the fiesta reflects the best of mushrooms. There is a warm mushroom salad for salad lovers and the entire menu can be tweaked according to veg and non veg preferences. The chocolate and crumb fried button mushrooms are served with saffron cream, pepper coulis and balsamic reduction. This makes for a good pairing and treats your palate to a whole new flavour.

Oriental crust - seafood pizza with white fungus comes next and this mushroom crunchiness is somewhat like biting into tender coconut shavings. Salmon ravioli with dill cream, shitake and caper jus is the main course and the presentation will melt your heart first and followed by ravioli.

Portobello and sundried tomato risotto with mascarpone cheese, Chocolate mud pie with vanilla and truffle oil ice cream are some of the dishes.

The other funghi dishes on offer are assortiti piatto di funghi (assorted mushroom platter), porcini glazed smoked chicken breast with enochi mushroom and garden shoot salad, pan seared scallops, with morel and prune sauce, celery buds, Bacon portabello and black fungus cannello with tallegio cheese.

Or rather eat what you like on the menu but the dessert has to be the chocolate mud pie with vanilla and truffle oil ice cream. That’s when you will know why truffle is so sought after. The fest is on for dinner till August 28.
