Pizza Gamberi, according to the chef, is an authentic Neapolitan pizza, quintessentially melt-in-the-mouth. The chef uses white wine to intensify, enhance and accentuate the flavour and aroma of the prawns. The topping boasts all colours making it a feast for the eyes. The bouquet of ingredients used makes it a healthy treat.

Pizza Gamberi

Ingredients

120 gms pizza dough

150 gms fresh prawns

5 gms garlic

10 ml olive oil

20 ml white wine

5 gms chopped parsley

80 gms pizza sauce

100 gms mozzarella

20 gms baby rocket

100 gms cherry tomato

50 gms olives

3 gms dry oregano

Salt and pepper to taste

Method

Remove the shell from the prawns, wash it and cut into half. Heat the oil, add garlic and cook for a few seconds. Add prawns and season with salt and pepper. Add white wine and let it evaporate. When the prawns are cooked, add chopped parsley and keep it aside. Roll the dough very thin, spread the pizza sauce, sprinkle the mozzarella, add cherry tomato and olives and arrange the prawns. Cook in oven at 250 degrees for a few minutes. Remove from oven, sprinkle the dry oregano, add the baby rocket and serve hot.
