The chive is the smallest, but one of the finest-flavoured of the onion tribe, belonging to the botanical group of plants called Allium, which also includes garlic, leek and shallot. The bulbs grow in dense clusters, and are elongated, with white, rather firm sheaths, the outer sheath sometimes grey.
Chives’ health benefits make it one of the best and most nutritious additions to any meal. People who consume chives, as well as the rest of the plants from the onion family, can actually minimise their risk of getting cancer. The flavonoid content contributes significantly to the reduction of high blood pressure.
Chives are rich in vitamins E and C, which have antioxidant properties. These properties help combat free radicals that can damage the cells. Thus, they can protect people from cancer, cardiac diseases and degenerative ailments.
Now, for a recipe.
Ingredients:
Extra-virgin olive oil: 2 tbsp
White-wine vinegar: 1 tbsp
Dijon mustard: half a tsp
Sugar: quarter tsp
Water: 1 tbsp
Chopped chives: 1 tbsp
Salt
Freshly-ground pepper
Method: Blend olive oil, white wine vinegar, Dijon mustard, sugar and water for 1 minute. Now, add chopped chives and adjust seasoning. Dress your favourite greens with chives dressing.
