Caramel ice cream

Ingredients

Milk – 250 ml

Double cream – 375 ml

Sugar – 200 gm

Water – 75 ml

Egg yolks – 6

Vanilla essence - 1 tsp

Method

Take a heavy bottomed saucepan. Combine sugar and water. Add the vanilla essence. Cook over low heat until the sugar dissolves. Increase the heat and gently boil until the syrup turns amber, in about 8 minutes. Remove from flame and add the double cream. Stir until the caramel melts completely. There will be bubble formation. Place it back on the hob, pour in the milk and stir. Gently simmer.

Whisk the eggs in a separate bowl with an electric or handheld beater. Pour the caramel cream into the egg yolks, whisking all the while. Pour the mixture into the saucepan and simmer, whisking again, until the mixture coats the back of a wooden spoon. Strain and pour into a bowl. Cover with clingfilm and let it cool.

Refrigerate until set, churn in an ice-cream maker or process until smooth and re-freeze overnight.

Cotton candy ice cream

Ingredients

Cotton candy - 180 gm package

Egg yolks - 10

Milk - 2 cups

Heavy cream - 2 cups

Sugar - 40 gm

White sugar - 2 tbsp

Vanilla extract - 1 tsp

Salt – one-fourth tsp

Cotton candy for garnish

Method

In a large bowl whisk one-fourth cup of sugar with the egg yolks until the sugar is dissolved. In a medium vessel, dissolve the cotton candy and 2 tbsp sugar into the heavy cream over low to medium heat and heat to a gradual boil.

Slowly drizzle a small portion of the heavy cream mixture into the egg yolks while whisking rapidly, gradually add until the egg yolk mixture is loose. Pour the whole mixture back into the pot and stir constantly over low heat until the mixture thickens.

Once it thickens, strain the mixture back into the bowl and add the milk and vanilla extract. Turn over to your ice-cream machine. If not, place the entire bowl into the freezer for about one-and-a-half hours. Then take it out and blend it with a hand held blender, or mixer and freeze for another half an hour.

Repeat the process every half an hour until your desired consistency is reached. Garnish with more cotton candy. Enjoy!
