Mexican sweet fried bananas
Ingredients
Plantains , semi -ripe — 4
Sugar — 100 gms
Freshly sqeezed orange juice — 1/2 cup
Grated orange rind — 1 tbsp
Butter — 4 tbsp
Powdered sugar — 1/2 cup
Sour cream — 1/2 cup
Method
Slice the bananas horizontally and vertically into halves. Fry the bananas in hot, melted butter in a pan , until they are golden. In a bowl, mix the sugar, orange juice and orange rind and pour over the bananas. Simmer over medium heat for 10 minutes. Place the bananas in serving bowls. Mix the powdered sugar and sour cream and pour this over the bananas.
Banana bread
Ingredients
Ripe Bananas (chopped) — 2
Flour — 1 1/2 cups
Sugar — 1 cup
Melted butter — 100 gms
Soda bicarbonate — 1 tsp
Sour cream — 1/2 cup
Salt — 1/2 tsp
Eggs — 2 nos
Vanilla extract — 1 tsp
Walnuts — 1/2 cup
Method
Grease a 9" X 5" loaf tin. Preheat the oven at 175 degrees C / 350 degrees F. In a bowl, combine the melted butter and the sugar. Add the eggs and the vanilla essence. Sift the flour with cooking soda and salt. Fold the flour into the batter. Finally, add the sour cream and the chopped walnuts. Fold in the chopped bananas. Stir well. Pour this into the prepared loaf tin. Spread the mixture evenly. Bake for one hour, or until the centre is cooked as is evidenced by a clean-of-crumbs toothpick inserted in the centre. Cool for 10 minutes before turning out.
Banana wrap
Ingredients
Banana — 1 small and ripe, peeled
Flour tortilla — 1 (eight inches)
Peanut butter — 3 tbsp
Grape jelly — 2-3 tbsp
Method
Keep the tortilla on a paper towel. Microwave on high for 10-20 seconds , until the tortilla is soft and slightly hot. Apply a layer of peanut butter, add a layer of grape jelly. Place the banana near the right edge of the tortilla. Fold up to the bottom fourth. Bring the right edge over the tortilla and roll up. Serve hot!
