What did you have for dinner last night?

I usually have a light dinner of fruits. Yesterday, I had a ragi dosa with ginger chutney.

What are you reading now?

Mario Puzo’s The Godfather. This is the fourth time I’m reading it, and I often re-read just my favourite parts. I love the way he has written the story.

What's your favourite recipe book?

It has to be The French Laundry Cookbook by Thomas Keller. It’s like a Bible, as he’s one of the pioneers of the fine-dining concept. The kind of ingredients he uses are very seasonal and he pays a lot of attention to the presentation. His concept of food is about having more courses with smaller portions. It leaves the diners longing for more instead of getting bored by chewing on the same dish for an extended period of time.

Next vacation? What do you plan to eat there?

Spain, probably Madrid. They have fantastic Spanish paella and the tapas are great.

Best meal?

On a rainy day in the Andamans where I used to live, steaming hot rice with my mom’s fish curry made with the freshest catch.

What about the worst?

I wouldn’t say worst, but I have had meals where the combination, ingredients or the occasion didn’t quite work. Apart from that, I would not eat upma even if it’s sprinkled with gold dust! I absolutely hate it.

Places you eat at most often?

Kipling Cafe on ECR for the sheer pleasure of the drive. They also have decent food. The Wharf at Temple Bay is another favourite.

Lessons learnt in the kitchen?

Discipline. It teaches you, so that skills will automatically come. If you have passion, discipline will not be a problem.

Any secret junk food confessions?

Black Angus burger with plenty of mayonnaise sandwiched with fries. You must try it, at least with chips. It gives an added crunch which is delicious.

Last meal on earth: What would you choose?

Dulce de Leche from Haagen-Dazs.
