Sizzling hot from Mexico

Try Mexican spread from four different menu

Four rotating a la carte menus. The most ordinary of dishes in them are the burritos. The dishes to look forward are the Pollo al cerveza (grilled chicken) or the chipotle seasoned Prawns in diablo sauce. Not to miss the juicy chorizo meat in an Ensalada de Mexicana.

Where? At La Cantina, the Mexican speciality restaurant at Novotel Hyderabad Convention Centre. The restaurant is celebrating the Mexican festival held in the expertise of visiting Chef Alberto G. Humphrey Guerrero from Mexico. And to tell food lover that there is more to Mexican food than just nachos, Chef Alberto is creating not one but four different menus based on the four regions of Mexico.

“This is done to highlight the food of the different regions. Depending on the region, food in Mexico is steamed, roasted or fried,” he explains. Besides the some exotic-twisted dishes, Alberto will also be whipping up some traditional dishes of Mexico. “The dish is a preparation made from mixed sea food,” he says.

Explaining in detail about the Mexican way of eating and cooking, he says, “The staple of Mexican cuisine are typically corn and beans. Corn, is traditionally Mexico's staple grain, it is eaten fresh, on the cob, and as an ingredient in a number of dishes. Corn is used to make masa, dough for tamales, tortillas, gorditas, and many other corn-based food items. Squash and peppers also play an important role in Mexican cuisine.” To give his food the unqiue Mexican fiery bite Alberto has shipped various types of chillies. The one that stand out is the Chipotle. A smoke-dried jalapeno chilli. A must-try is the sizzling mixed vegetable fajita in chipotle sauce or the chicken with peanut and chipotle sauce, with served with soft flour tortillas. Another good pick is the traditional chicken posole soup, served with garbanzo, chipotle, onion and oregano.

Finally to cut all that chilli, the choice of sweet dishes are, Chihuhuan style Apple Capirotada Torrejas, sauté bread in a caramel sauce with apples and cream cheese, mousse de sandia,watermelon and kiwi mousse with sweet tortilla chips, paricutin,chocolate fiesta of chocolate cake and lots more.
