This is a healthy, easy-to-cook dish for fish lovers, sent to us by Surinder Malhotra, Executive Chef, Blue Water Grille, West Delhi. Swipe off the lemony sauce with a loaf of fresh bread to make it a one dish meal.
Lemony buttery fishIngredients
200 gms fillet steak, cleaned
3 ml olive oil
Salt and crushed black pepper for seasoning
For grilled vegetables
30 gm red bell pepper fingers
30 gm yellow bell pepper fingers
20 gm zucchini sticks
20 gm red pumpkin fingers
20 gm fresh green asparagus tips
5 ml olive oil
Salt and pepper to taste
Lemon butter sauce
10 ml white wine
5 ml lemon juice
30 butter
10 ml cream
Oregano pinch
1 gm chopped parsley
Salt and pepper to taste
Method
Marinate the fish with olive oil, salt and pepper. Marinate the vegetables with olive oil, salt and pepper and grill them till they are cooked.
Grill the fish until it is cooked. Reduce the white wine, add butter and cream, mix it well.
Add lemon juice, oregano and chopped parsley.
Season to taste with salt and pepper.
Arrange the grilled vegetables, fish on a dinner plate and pour the lemon butter sauce on top of the fish. Garnish with parsley sprig and cherry tomato.
