Once a mystical food that was affordable only by the elite, mushrooms have emerged as a nutritious and exotic option available in markets.
In an effort to popularise the use of mushrooms with truufles, i-t.ALIA is hosting a truffle and mushrooms festival from November 27 to December 6.
The festival will see many preparations such as Alba Summer Truffle, Chantrelle, Portobello and Porcini from Italy, Morels from Kashmir, Oyster and Button mushrooms from Bangalore in a delightful menu of soups, antipasti, pastas, risottos and the main course.
Executive Chef Rajiv Vimal and his team have used their culinary skills in combining mushrooms to create an authentic Italian menu.
Enjoy the flavour of the truffles in the delicately flavoured asparagus salad, roasted pumpkin soup with truffles, mushroom and truffle tortellini and parmesan crisps. Try a selection of pastas like Orechiette with porcini and Fontana, Rabbit raviolini with morels and peas.
