Mustard is a condiment with a sharp, pungent flavour. The whole, ground, cracked, or bruised seeds are mixed with water, salt, lemon juice or other liquids, and sometimes other flavourings and spices, to create a paste or sauce ranging in colour from bright yellow to dark brown. English mustard is among the strongest. French-style Dijon mustard has added vinegar, and is milder. Bavarian sweet mustard is milder still. Homemade mustards are often far hotter and more intensely flavoured than commercial preparations.

Commonly paired with meats and cheeses, mustard is a popular addition to sandwiches, hamburgers and hot dogs. It is also used as an ingredient in many dressings, glazes, sauces, soups and marinades; as a cream or a seed, mustard is used in Indian, Mediterranean, northern European, Asian, American and African cuisines, making it one of the most widely used spices and condiments in the world.

Dry mustard, sold in cans, is used in cooking and can be mixed with water to become prepared mustard. Because of its antibacterial properties, mustard does not require refrigeration; it will not grow mould, mildew, or harmful bacteria. Unrefrigerated mustard will lose its pungency quickly, and should be stored in a tightly sealed, sterilised container in a cool, dark place.

Mustard seeds are rich in antioxidants and selenium, which is known to have anti-inflammatory properties. One teaspoon of mustard seed is packed with omega-3 fatty acids, omega-6 fatty acids, potassium, phosphorous, magnesium and calcium. These speed up metabolism, lower blood pressure and prevent atherosclerosis.Mustard seeds have antiseptic as well as anti-fungal properties. This makes them very useful for purging the digestive system and strengthening the body's natural defense system.Mustard seeds consumed on a regular basis have been found to be beneficial for reducing the frequency of migraines.

Honey mustard

Honey mustard, is a blend of mustard and honey, usually 1:1. Most popular topping for sandwiches and as a dip for chickens strips, French fries, onion rings and finger foods. It can also be combined with vinegar, mayonnaise and/or olive oil to make a salad dressing.

Walnut, Mandarin & Iceberg in Honey Mustard Dressing

Ingredients

Iceberg lettuce: Half a bunch

Walnut: 10 gm

Honey: 2 tsp

Mandarin: 1 no

Mayonnaise: 4 tsp

Lemon juice: half a tsp

Mustard: 2 tsp

Method: Cut iceberg lettuce into small bits; crush the walnut.

Add mandarin and toss the salad with honey mustard dressing.

To prepare honey mustard dressing, put mayonnaise, lemon juice, mustard and honey in a processer.

Blend to a fine paste.
