Hot Apple PunchIngredients
Apple juice: 1 litre
Star anise: 3
Cloves: 2
Green cardamom: 1
Cinnamon stick, crumbled: A small piece
Nutmeg: A pinch
Mint leaves: 1 tsp
Lemon, sliced: 1
Method
Place one litre of apple juice in a large saucepan with star anise, cloves, cardamom, nutmeg, and cinnamon stick. Add sliced lemon and mint leaves. Heat it slowly and leave it aside for 10 minutes before garnishing and serving.
Vegetable KebabIngredients
Boiled potatoes: 4 medium-sized
Boiled green peas: half cup
Spinach: 100 grams
Green chillies, chopped: 1 tbsp
Coriander leaves, chopped: 2 tbsp
Ginger, crushed: 1 tbsp
Chaat masala: 1 tsp
Corn flour: 2 tbsp
Chopped nuts: quarter cup
Oil: For cooking
Salt: To taste
Method
Peel and grate the boiled potatoes. Macerate boiled green peas. Blanch spinach leaves in salted boiling water, refresh in cold water and squeeze out excess water. Chop finely. Mix grated potatoes, peas and spinach. Add chopped green chillies, coriander leaves, ginger, chaat masala, nuts and salt, along with corn flour for binding. Divide mixture into 20 equal portions. Shape each portion into a ball and then press it between your palms to give it a flat tikki shape. Heat oil in a pan. Deep-fry the tikkis in hot oil for three or four minutes. Remove and serve hot with your choice of sauce / chutney.
Open Cauliflower SandwichIngredients
Cauliflower, washed and sliced into florets: 500 gm
Onions, chopped: 100 gm
Ginger strips: 1 tsp
Oil or butter: 2 tbsp
Soya sauce: 1 tbsp
Chilli sauce: 1 tbsp
Tomato sauce: 1 tsp
Vegetable stock: 1 cup
Garam masala powder: 1 tsp
Green chilli: 1
Pepper corns: 10
Garlic: 2 cloves
Turmeric powder: half tsp
Red chilli powder: half tsp
Brown bread slices: 8
Salt: To taste
Method
Heat oil in a heavy-bottomed pan and fry onions till golden brown. Add the powders, green chilli, garlic and ginger strips while stirring. Now, add the cauliflower and keep stirring till the cauliflower is slightly brown. Moisten with vegetable stock and reduce the heat. Add salt, pepper, and chopped coriander leaves. Add soya, chilli and tomato sauce and mix well. Keep in the oven for 15 minutes. Serve cauliflower on a bed of sliced toasted brown bread.
Gajar Halwa RollIngredients
For Gajar Halwa
Carrots: 1 kg
Milk: 1 litre
Cardamom powder: 1 tsp
Ghee: 3 tbsp
Chopped nuts: half cup
Sugar: 450 gm
For the Pancake
Maida: 1 cup
Soda bicarbonate: A pinch
Water: As required
Vanilla essence: A few drops
Egg: 1
Oil: For cooking
Method
For the gajar halwa, wash and grate the carrots. Put milk to boil, and add grated carrots. Cook on a low flame, stirring occasionally, till the milk thickens and the carrot mixture is soft and done. Add sugar, ghee and cook till it thickens. Add cardamom powder and nuts. Mix well. Remove from heat and arrange in a serving dish. Garnish with nuts. Keep aside and let it cool.
For the pancake, prepare a batter with the ingredients listed and rest for 10 minutes. Using a non-stick pan, prepare thin pancakes, cook on both sides, and remove. Cool the pancake and stuff with the cooled halwa, roll and slice. Serve chilled.
