Deep fried juicy shrimp dumplings
Ingredients
Shrimps - 250 gms
Table salt - 5 gms
Sugar - 5 gms
Broth - 50 ml
Agar Agar - 10 gms
Bread crumbs - 100 gms
Potato starch - 30 gms
Refined oil - for frying
Onion oil - 10 ml
Plum sauce - 100 gms
Method
Peel, wash and mince the shrimps.
In a mixing tray, add the minced shrimps and the seasoning.
Start mixing in a circular motion and continue for seven to eight minutes.
Then add the potato starch and mix.
Add the onion oil.
Once the mixture is ready, rest it for sometime in a refrigerator.
Next mix the agar agar with the broth and heat it till the powder melts. Season it and cool.
Once it sets, cut into small cubes.
Now to make the juicy dumplings.
Take a little mince in your hand and place the set jelly in the centre, fold to cover and form into a ball.
Roll this ball on to bread crumbs and deep fry.
Serve hot with plum sauce.
