I learnt to make Palada payasam from my mother. It is made of rice flour.

What you need

Ada, made with rice flour – 1 cup

Condensed milk – 1 cup

Milk – 500 ml

Water – 250 ml

Sugar – 1/2 cup

Cardamom, crushed – 4-5 pods

Ghee – 3 tbsp

Cashew nuts and raisins (fry and keep aside) – 10

Cooking instructions

Boil ada by putting it in 2-4 cups of boiling water. Keep it covered for 30 minutes. Then drain water completely.

Heat ghee in a pan and fry ada to a light pink colour and keep aside.

Boil milk and water in a thick bottom pan, add boiled ada and reduce heat to low medium while stirring all the time, keep stirring till milk is reduced to a thick consistency.

Add condensed milk and cook for 10 minutes more.

Add sugar and mix well. Remove from flame and garnish with fried cashew and raisins.

Serve warm or cold.
