Handvo

Handvo is a vegetable cheese cake made from vegetables, paneer and cheese. It is garnished with sweet chutney made of mango and green chutney made of coriander and chillies. This makes the dish quite spicy and tangy. I learnt this recipe in its basic form from my mother-in-law. This makes the dish a complete meal.

What you need

Potato, mashed – 2 cups

Brown bread – 3 slices

Beans, carrot, peas, cauliflower, finely chopped and boiled – 1 cup

Cottage cheese (paneer), crumbled – 1/2 cup

Cheese – 1 cube

Coriander leaves – 2 tbsp

Mint leaves – 2 tbsp

Ginger-chilli paste – 2 tbsp

Garam masala – 1/2 tsp

Lemon juice – 1 tsp

Sugar – 1 tbsp

Pepper powder – 1/2 tsp

Salt – to taste

Oil – 3 tbsp

Semolina (rava) – 3 tbsp

For green chutney

Coriander leaves – 1 cup

Mint leaves – 1/2 cup

Ginger piece – 1 inch piece

Green chilli – 2

Lemon

Salt

For mango chutney

Mango, raw, peeled, cut – 1 cup

Jaggery – 3 tbsp

Red chilli powder – 2 tsp

Coriander powder – 1 tsp

Salt

Cooking instructions

Mix the mashed potatoes with the brown bread soaked in water. Add salt and pepper, mix well and prepare a dough. Keep aside.

Add paneer, coriander leaves, mint leaves, ginger-chilli paste, garam masala, lemon, sugar, cheese and salt to the mixed vegetables to make stuffing.

For the green chutney mix all the required ingredients and grind to a thick paste.

For mango chutney mix all the ingredients and grind to a thick paste.

Make two parts of the potato mixed dough and flatten them in two round shapes. In one part, spread green chutney and on the other part, spread mango chutney. On the first part spread the vegetable stuffing already prepared and place the other part on top of it. You can mould it into a desired shape. Sprinkle rava on both sides. In a pan add oil and place the handvo on it. On a slow flame roast it till it turns golden brown and crisp on both sides. Garnish with vegetables, paneer and chutney. Serve hot.
