Elai vadam is a traditional recipe that I learnt from my grandmother. I have add a stuffing to it making it tasty and more wholesome.
What you need
Boiled rice - 1 cup
Gingelly oil - 3 tsp
Cumin - 1/2 tsp
Asafoetida - a pinch
For the stuffing
Oats -1 cup
Black gram powder - 2 tsp
Chilli powder -1 tsp
Mustard - 1/2 tsp
Salt - to taste
Cooking instructions
Soak the boiled rice for four hours and grind to a smooth paste with salt. Allow to ferment overnight.
Then add oil, jeera and asafoetida to the batter.
Spread the batter on clean plantain leaves and steam. Allow to cool and remove the vadam.
Prepare vadams in the same way and keep aside.
Soak oats with very little water and add black gram powder, chilli powder, and salt to it.
In a kadai, add little cooking oil and splutter the mustard seeds.
Now add the oats mixture to it and cook on a low flame.
Take each vadam and spread the filling and roll tightly.
Garnish with coriander leaves and carrots.
