Everybody loves sweets and chocolate is a special favourite. But people don’t make desserts that often because they think it is a hassle. And you need a good oven, a beater, cake tins... The list goes on. Well, here is a simple, easy-to-make, fudge brownie recipe which will never fail and it only requires a simple microwave, a ceramic mug (ceramic because it retains the heat well) and a fork. You also need a spoon to enjoy this after you are finished in about 5 minutes.

INGREDIENTS

1/4 cup flour

1/4 cup sugar

2 Tbsp cocoa (natural, unsweetened)

Pinch of salt

Tiny pinch of cinnamon powder

1 egg(beaten) or use 1/4 cup water for an eggless version

2 Tbsp regular olive oil

2 Tbsp Milk

1 to 2 drops vanilla extract

1 Tbsp hazelnut syrup(optional or change with flavor of your choice)

1 small scoop of ice cream to serve

1 Tbsp lightly crushed walnuts

1 Tbsp Chocolate chips

METHOD

Place flour, sugar, cocoa, salt, and cinnamon in a ceramic mug. Stir with a fork or spoon to mix well and break up any clumps.

A pinch of salt makes the chocolate more chocolatey. I have added a dash of cinnamon for an added layer of flavour. If you are the mood for a mocha brownie just add a tsp of coffee powder to the recipe.

Add the oil and beaten egg to the cup and stir until the mixture is smooth and there are no lumps. Then add hazelnut syrup and vanilla and mix well.

The hazelnut syrup adds a nutty taste, and the vanilla a little flavour but you can experiment with your own flavours.

Sprinkle walnuts and chocolate chips on top and lightly push it in the mixture.

This is so that they are sunk into the mix and the nuts and chocolate chips are even with the surface of the Brownie mix.

Place in microwave and heat on high until the mixture is cooked through, about a 1 minute and 40 seconds for a 1000 watt microwave. (You may have to experiment and adjust the time for less or more powerful microwaves.) It should still be moist when cooked through, not dry.

You can make the mixture and keep it ready, microwave it just before you want to serve it.

Let cool for a minute, place a dollop of your favourite icecream on top and dig in.
