What did you have for dinner last night?

I had Singapore’s famous chicken rice dish: ginger rice with steamed chicken and homemade chilli sauce.

What are you reading now?

What's your favourite recipe book? And why?

Thai Food by David Thomson. He’s a foreigner who does authentic Thai food researched across Thailand. It makes for fascinating reading.

Next vacation? What do you plan to eat there?

I’m going to Japan. I plan to have kobe beef and visit the farms to study the manner in which they keep the cattle. Of course, I’ll also savour as much sushi and sashimi as I can!

Best meal?

At the Naam Restaurant in Bangkok by Chef David Thomson. We had a degustation menu (sampling small portions of all of a chef's signature dishes in one sitting) prepared by the chef.

What about the worst?

I once had dinner in a grill and biryani restaurant where the starters were burnt and cold, the biryani was way too spicy and the gulab jamuns very large and soggy.

Kutanad kerala restaurant in Adyar depot

Lessons learnt in the kitchen?

Make good food that makes people happy and delighted so that they come back again and again.

Any secret junk food confessions?

Kentucky fried chicken

Last meal on earth: What would you choose?

Chicken kapow with fried egg. It’s a simply delicious and is a bestselling Thai dish. It must have diet coke to go with it.
