An uncomplicated chicken dish, just right for weekend cooking!
This is a simple chicken dish that can go very well with a loaf of bread, now so easily available in a wide variety in the city bakeries. Though with the mashed potatoes, it makes a complete meal, a good mix of protein and carbohydrate.
280 grams chicken with bone
80 gms mashed potatoes
50 gms pesto cream
20 gms sliced olives
20 gms cherry tomatoes
2 gms salt
3 gms black pepper
Marinade the chicken pieces in red wine, salt and pepper. Leave it aside for half an hour.
Heat a braising pan and add the chicken on the hot pan, sear from all side.
Add to it some stock and slow cook on low fire or inside an oven till the chicken is cooked.
Serve with mashed potatoes, olives and cherry tomatoes.
Pour the pesto sauce from the top.
