Bamboo shoots, commonly found in the Northeast region, is used in abundance for its distinct aroma, by the inhabitants as an accompaniment to the main ingredient in several dishes. Here it finds a perfect partner in pork to come together as a wholesome and delicious affair.

Pork with fresh bamboo shoots Ingredients

Fresh pork (cut into square pieces) - 20 gms

Garlic - (5-6 flakes) crushed to paste

Ginger - 1 tsp

Salt - to taste

Tomato – 1 (chopped into small cubes)

Naga Raja mirchi – 1

Fresh bamboo shoots – 50 gms

Momg momg (Naga black papper) - 10-15

Method

Wash the cut meat pieces with salt and hot water, rinse thoroughly. Roast the meat for 10-15 minutes. Add garlic/ginger paste and salt and stir for 5-8 minutes. Add the tomato and raja mirchi and cook, stirring continuously till the sauce thickens. Add the bamboo shoots and 2 cups of water till the meat is tender. Garnish with momg momg. Serve hot with steamed rice
