Kiwi fruit is an excellent source of vitamin C and phytochemicals.
It provides potassium and is a fairly rich source of soluble fibre.
The enzyme actinide present in it is a natural meat tenderizer, which can be used as a marinade to tenderise meat.
Kiwi can be eaten fresh and is good for desserts, jams, cakes. Don’t overcook the fruit because it quickly turns to mush and spoils the flavour and taste.
Kiwi cheesecake
Ingredients:
Marie biscuits - 200 gm
Melted butter – 1/2 cup
Kiwi pulp - 1 1/2 cups (4 kiwis, de-skinned and pureed)
Sugar - 1/2 cup
Cheese - 1/2 cup
Fresh cream - 1/2 cup
Gelatin - 1 tbsp
To garnish:
Kiwi fruit slices - 6-8
Chocolate powder – 1 tbsp
Chocolate curls – a few
Method:
Crush the biscuits to a fine powder. Transfer to a bowl and mix with melted butter.
Line the base of a 6” pie dish evenly and smoothly with the biscuit mixture. Place this in the freezer to set.
Whisk the kiwi pulp, add sugar, cheese and cream. Mix well to make a smooth paste.
Soak gelatin in 2-3 tbsp of water and double boil to dissolve. Stir the gelatin into the kiwi pulp mixture and pour over the set biscuit base.
Cover and place it in the refrigerator to set overnight or for at least six hours.
Arrange kiwi fruit slices and chocolate curls on the kiwi cheese cake and dust lightly with drinking chocolate. Cut into wedges and serve.
Fried chicken with kiwi
Ingredients:
Chicken boneless -8 00 gm
Milk - 1/2 cup
Maida - 1/2 cup
Corn flour - 1/2 cup
Egg yolk - 1
Salt and pepper to taste
Crushed pepper - 2 tbsp
Lime juice - 4 tbsp
Kiwi fruit sliced - 10-12 slices
Celery - 2 tbsp
Method:
Clean chicken and cut into small pieces.
Make a marinade with milk, egg yolk, corn flour, lime juice, pepper and salt. Keep it aside for one hour.
Heat oil in a deep frying pan. Deep fry chicken pieces till golden. Drain on absorbent paper stir in little salt and pepper to kiwi fruit slices. Arrange them in a plate. Transfer fried chicken and serve hot with chopped celery.
