What did you have for dinner last night?

I had dinner at home as I love food made by my wife. She had cooked rajma , chawal , aloo gobi , raita , roti and salad

What are you reading now?

I’m planning a menu for an upcoming restaurant in Chennai, so I’m going through my menu collection to come up with something unique.

What's your favourite recipe book?

I have worked in Oberoi Mumbai for half my life as a chef, and so I love French Cooking. Larousse Gastronomique is my favourite reference book. It is majorly about French cooking, recipes and techniques and is a handy guide to the kind of cuisine I enjoy cooking.

Next vacation? What do you plan to eat there?

I haven’t travelled to many parts of the world, but I’m currently planning a trip to Istanbul for my next holiday. I’ve heard a lot about the street food there and can’t wait to try some freshly-baked simit , borek and the ultimate baked potato, kumpir.

Best meal?

Always will be ghar ka khaana. Anything my wife and mother cook is made with a lot of love and that makes the difference.

What about the worst?

I can’t recall. Perhaps I have been lucky that no food served to me has been so terrible that it can be called my worst meal!

Places you eat at most often?

I love street food, especially in Mumbai, Delhi and Amritsar.

Lessons learnt in the kitchen?

Make sure you cook with a smile on your face and with love in your heart. Only then will you create the best meal you possibly can.

Any secret junk food confessions?

Vada pav in Mumbai is a weakness of mine. I also indulge in pizza at times.

Last meal on earth: What would you choose?

A simple meal: rajma and chawal will do just fine as my last meal.
