A sweet one, this one has different fruits coming in to lend varied textures.

The sweetness of pineapple is enhanced by caramelised sugar, while the fruit is further softened by butter and made syrupy with orange juice. Grated coconut and raisins blend to give the final appearance. A pleasant wind-up to a good meal.

Caribbean pineapple medley

Ingredients:

Pineapple 3 slices

Butter 4 tbsp

Sugar 6 tbsp

Orange juice 100 ml

Cashew nuts and raisins, chopped 50 gms

Grated coconut 5 tbsp

Method:

Heat a saucepan and add 2 tbsp of sugar and caramelise it. Into the caramelised sugar, add the pineapple slices and toss it for a few minutes.

Add butter and sauté. Now stir in the rest of the sugar and sauté. Pour orange juice and bring to boil. After it boils for a few minutes, add the grated coconut, chopped cashew and raisins and cook till a thick consistency.

Serve hot in a dessert bowl garnished with chopped cashew, raisins and grated coconut.
