Did you ever think soup could be anything but dull? Well, here’s a recipe that will have you craving for more.

Preparing soup is easy. It doesn’t have to be complicated or fancy, but it should not be boring. This recipe takes the simple tomato soup, which can get a little dull sometimes, and changes it a wee bit for an extra delicious twist. Serve with wholegrain bread to sop up the yummy broth.

Tomato, chickpea and spinach soup

Serves: 4

You will need

One tablespoon of oil

One chopped onion

One chopped green capsicum

Two finely chopped garlic cloves

One teaspoon cumin seeds

Quarter teaspoon chilli powder (optional):

One-and-a-half cups of fresh tomatoes crushed in the blender

One-and-a-quarter cups of cooked and drained chickpeas

Three-quarter cups packed with washed spinach leaves

Freshly ground pepper to taste

Tweak that tomato

Heat oil in a pot; drop in the cumin, onion and capsicum and sauté until they get soft.

Add the garlic and cook for another minute.

Next, add the tomatoes, chilli powder and 3-4 cups of water, and bring to a boil.

You can also strain the cooking liquid from the chickpeas and add it instead of water.

Once this is done, reduce the heat and cook for about 10 minutes.

Finally, stir in the spinach, and season the soup with salt and pepper.

Ladle into bowls and serve hot with plenty of bread.

Make sure you...

Always have an adult present in the kitchen.

Be careful with sharp knives.

Never leave the kitchen with the stove turned on.

Stovetops and pots can get hot. Never touch them without gloves.

Turn pot handles to the side to avoid knocking them over.

Clean up any spills on the floor immediately to prevent slipping.

Tie back long hair and keep sleeves rolled up. No loose, baggy, or flowing garments.

Wash hands before you begin cooking, and many times throughout the process as well.

Wash all fresh fruit and vegetables properly.
