Sweet Potato Biscuits

Ingredients

Mashed sweet potatoes : 60 gm

Butter, melted : 30 gm

Milk : 30-40 ml

Flour : 110 gm

Baking soda : A pinch

Baking powder : ½ tsp

Powdered sugar : 2 tsp

Method

1. Mix together sweet potato, butter, and half the milk until well blended.

2. Sieve flour, baking powder, baking soda and sugar.

3. Add the wet ingredients to the dry. Add remaining milk to moisten the dough, if needed.

4. Turn the dough out onto a lightly floured surface; knead for a minute or two till it becomes tighter

5. Roll the dough to a 3/4-inch thickness; cut with a 2-inch round cutter. Place the biscuits on lightly greased baking sheets. Bake at 180C° for 15 minutes or until golden brown.

Suggestion : Eat hot with butter/ honey/ jam/ mayo/salami, or just plain.

Pumpkin Spice Cake

Ingredients

Pumpkin puree :110 gm

Sugar : 120 gm

Vegetable oil : 70 ml

Eggs : 1 - ¼ (to get 1/4 beat the egg and

take the quantity required)

Flour : 75 gm

Baking soda : ½ tsp

Cinnamon powder : 1/8 tsp

Ginger powder : ¼ tsp

Clove powder : A pinch

Salt : A pinch

Method

1. In a mixing bowl, beat pumpkin, sugar, and oil. Add eggs, and mix well.

2. In another bowl, sieve flour, baking soda, spices and salt.

3. Add the dry ingredients to the wet and beat until well blended.

4. Pour the batter into a greased baking pan.

5. Bake at 175° C for 25 to 30 minutes, or until the cake is done.

Suggestion : Frost with cream cheese and sprinkle toasted walnuts.
